Not much going on.......


Besides painting at the office, helping the kids with their homework, and thinking about remodeling the house.. Not much going on.... Jonah is selling BBQ plate tickets for Friday Night..We've bought six , so we'll give a couple away. (Fundraiser for the school).

Yesterday was My 13th Wedding Anniversary.. My husband and the children sent this beautiful flower arrangement to the office.


It was also my One Year Anniversary on my favorite website, Radio Paradise..

Anniversaries Abound!

The next few days are just full of anniversaries..
Today is my friend, Tracy & her husband Layne's anniversary. Happy Anniversary to you two!

It's also the anniversary of Hurricane Andrew in 1992, .. Then Monday is My Wedding anniversary AND my one year anniversary on Radio Paradise. Then Tuesday is the Anniversary of Hurricane Katrina.


The Hurricane Anniversary is all over the media.. and then you know the 9/11 is coming up.... These anniversaries seem to make me relive the times all over again.

I remember when I signed on Radio Paradise, via a friend that told me about it, We were under warnings for storms and Hurricane Katrina was approaching.. I have relatives in south Mississippi,so we were checking on them as much as possible. Then when the Hurricane hit, We were out of power for about three days. Of course that's because of the storms that it spawned up as far as Memphis ,Tn (I'm in North Mississippi). I remember the weeks after, we all were donating things to be taken to the coast and to New Orleans. Everyone was helping in some way. I also remember when the power came back on, seeing the reporters and crying because there were people out there, dying and it seemed help was not getting to them enough. I have friends that went down there to deliver food and supplies, and they were not let in, because for some reason... they were NOT ALLOWED to help.. There were truck loads of supplies, that were sitting on the side of the road, because no one would let the truckers in to get the help to the people. I still do not understand the logic in this. There were people willing to clear the road to get the supplies in, (professionals) but they were NOT ALLOWED..

Something went wrong there.. .. As I am typing this, there are storms about to come again.. Who knows when the next Katrina will hit. Will we do a better job next time? I seriously doubt it...because the Same folks are in charge...

The Past Week

With gas prices at $3.00 or more a gallon, it has put a damper on our coming and going around here. My kids don't like it, but that's just the way it is.. They wanted to go to the county fair, but when I found out it was $5 each to get in and $12 to ride the rides(armband)....... I just had to say no. The safety issue itself was a big deterrant, even if it had been at a reasonable price. They have the livestock show and rodeo that goes on each night. My kids love horses and livestock... but with the heat as it has been.. It just didn't seem worth the hassle.This past week, the kids had their Open House at school and the Book Fair, all on Thursday Night. Now when I was in school, we didn't have OPEN HOUSE until well into the school year. That way, the parents could look at the child's work and how they were progressing through the year. I don't quite understand the logic of an Open House during the second or third week of school. Maybe I am behind in my thinking..I'm sure some educator in our school district finds some worthy reason for it.. All I know is the Book Fair part was just a setting where they could charge more for books than they would cost in a bookstore... and it was all in the name of FUND RAISING... For some reason, Our elementary school has to raise funds for everything. We even had to send Kleenex Tissue, Zip Lock Baggies, Hand Sanitizer and paper towels as part of the Child's listed School Supplies. Plus we have to pay a $15 per kid Activity Fee to start school.... What happened to the Tobacco settlement that was supposed to fund our Mississippi schools or the money from the casinos that was supposed to be good for our state??? My son's Junior high school is a relic of the 1950's. The schools that I went to were newer than the Junior and Highschool that my children will be attending. What is up with that? In the next county, only 20 miles up the highway... They have a Huge Elementary School.. My goodness , it looks like a college facility.. Oh.. I better not get myself started. This is a sore subject for me.. ... I love the small town atmosphere, but the lack of up to date facilities really get to me. They hold nearly 40 % of my paycheck out for taxes......What do they do with all that money they keep? They certainly aren't using it for North Tippah county schools.. OKay.. I guess I'm through ranting.. This is making me upset just thinking about it. Thanks for reading.. I'm usually not so lengthy in my blogs.. OK..Here's My Chocolate Pie Recipe...


  • My Chocolate Pie


3 T. Hersey's cocoa powder

2 cups sugar

3 eggs, beaten

3/4 cup Evaporated Milk

1/2 cup butter (melted)

1 tsp Watkins* double strength vanilla extract

2 tsp flour

1 tsp salt

1 frozen deep-dish pie crust

1 sheet of tin foil (to lightly lay over pie while it cooks)

  1. In large mixing bowl, mix all dry ingredients (cocoa,sugar,flour,salt).
  2. Whisk in the remaining liquid ingredients (eggs,evaporated milk,butter,vanilla)
  3. Mix by hand or on low with mixer for about 2 minutes.
  4. Pour mixture into frozen deep-dish pie crust.
  5. Bake in preheated 350-degrees oven for 40-45 minutes, or untila toothpick inserted in the middle comes out clean.(The center will no longer wiggle). You need to take a sheet of tin foil and loosely lay on top of pie while it's cooking. This prevents the pie crust from burning.

Cool completely

Now you need to put the Meringue on it..........

Meringue Recipe

3 egg whites

1/4 tsp cream of tartar

6 Tbsp. sugar

1/2 tsp Watkins double strength vanilla

1 dash of salt

Beat egg whites and cream of tartar in medium bowl with electric mixer on high speed until fowmy. Add the sugar, 1 tablespoon at a time; add vanilla and a dash of salt and beat for about 8 minutes until it makes a whipped cream. Frost the top of the pie completely, then put the pie in the oven, leaving the oven cracked, so you can watch carefully, put the oven on broil. Leave the pie in about one minute, until the meringue is barely starting to turn brown. This is giving it that toasted marshmellow look... Take out immediately.

Cool uncovered for about an hour. You can either refrigerate or leave in a cake or pie plate with the cover on.

The First Day Of School


Today was the first day of school for my kids. Jonah went into the 7th (Junior High) and Kristen into the 5th. They both were so excited to tell me about their day.

It was just a joy to hear them..They have their books and clothes all ready for in the morning. I wonder if it will be like this in a few weeks?

I couldn't help but laugh to myself, when my son proudly announced that he has " hit puberty", because he now has hair under his arms .

Boy , the stuff the kids discuss, after a long summer break.. Well, It's time to hit the books... I bet I'll learn a thing or two..

: Schools here got out May 26th and usually go back the first or second week in August.

Back To School !


It's been a long Hot summer. Although, I know that our schools start earlier than most, I have to admit, I'm glad it's time. I love the fall. It will still be hot for a little while longer, but that's ok. I can hardly wait for the Mums to start blooming and the leaves to change.. Sweater weather...I love to take the kids to the football games. I love the sound of the highschool marching bands playing. It's just a happy time for me. My kids are excited too. Although they love the swimming(we can still swim for another few weeks.), they are ready to go back. Today, I took my son by the Junior Highschool. There were some teachers there, preparing their rooms, and they let us come in and look around. Jonah liked it. It'sa small school, but he said that's good, because he won't get lost...lol

Well, Wish us luck..Monday will be here before we know it...
